Avi Resort & Casino Wins Two Awards at the 32nd Annual Chef's Food Fest
Avi Resort & Casino won two awards ("Best Use of Secret Ingredient" & "Best Booth") at the Laughlin Nevada Chamber of Commerce's 32nd Annual Chef's Food Fest. The secret ingredient this year was passion fruit. This is the third year for a secret ingredient since its intrduction in 2017 and the first year for a "Best Use of Secret Ingredient" award.
Taking home the first award for "Best Use of Secret Ingredient" was a team effort on the part of chefs James Hope and Felix Rodriguez. Together they developed the winning recipe for "Passion Fruit Glazed Pork Loin". James created a grilled pineapple, strawberry, melon and passion fruit salsa to top the pork loin that had been marinated by Felix in coconut milk, lime, brown sugar and soy sauce.
James Hope has been with Avi for eight years, and Felix Rodriguez has been at Avi four years. Combined, they have over fifty years of cooking experience.
The overall theme of the eent was "Flavors of the Islands", which was represented in Avi's booth decorations. The booth created an island feel with exotic flowers, tropical fruit and sea shells cascading down the palm-frond-covered tables. The decorations were situated to surround the food being served. It is no wonder that with this attention to detail, Avi received the award for "Best Booth".
